This recipe was orginally written for Christmas holiday brunch. Use it for an awesome Easter holiday brunch or any time you need a delicious,nutritious egg or breakfast casserole. This high protein breakfast casserole is laden with delicious vegetables. I've written the regular recipe, a vegetarian version, a low cholesterol version and a version vegans or those with egg allergies or who are lactose-intolerant.
